Ingredients
  

Brownie Base
  • 1 box Fudge-style brownie mix Or you can use a homemade recipe relying on melted butter and cocoa.
  • 1/2 cup Unsalted butter Melted.
  • 3 large Eggs As per the brownie mix instructions.
Mint Layer
  • 1 cup Andes mints Unwrapped.
  • 1 tablespoon Butter To help with melting.
  • 1/8 teaspoon Peppermint extract Optional for extra mint flavor.
Chocolate Topping
  • 1 cup Chocolate chips Semi-sweet or dark.
  • 2 tablespoons Unsalted butter For melting with the chocolate.

Method
 

Prepare Brownies
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch pan.
  2. Mix the brownie batter according to package instructions or your chosen homemade recipe.
  3. Pour the batter into the prepared pan and bake for 25-30 minutes or until the center is set with moist crumbs.
  4. Remove from oven and let cool completely before adding the mint layer.
Add Mint Layer
  1. In a saucepan over low heat, melt the Andes mints and butter together until smooth.
  2. Stir in the peppermint extract if using.
  3. Spread the mint mixture evenly over the cooled brownie layer.
Finish with Chocolate Topping
  1. Melt the chocolate chips and butter together gently until smooth.
  2. Pour the chocolate mixture over the mint layer and spread evenly.
  3. Chill the brownies for at least 1 hour before cutting.

Notes

For best results, do not overbake the brownies and allow them to cool completely before adding the mint layer. Use parchment paper for easy removal of the brownies from the pan.
