Ingredients

Main Ingredients
  • 1 whole whole chicken Bone-in for richer flavor or rotisserie chicken for a quick option.
  • 4 cups chicken broth Use a good quality broth for best flavor.
  • 3 cups wide egg noodles Homemade style noodles work well.
  • 1 teaspoon salt Adjust to taste, especially if using salted broth.
  • 1 teaspoon black pepper Freshly cracked for more flavor.
  • 1 medium onion Chopped, for added savory flavor.
  • 2 stalks celery Chopped, optional for base flavor.

Method

Preparation
  1. In a large pot, combine the whole chicken, chicken broth, onion, celery, salt, and pepper.
  2. Bring to a gentle simmer and cook until the chicken is tender (about 30 minutes).
Cooking
  1. Remove the chicken, shred the meat, and return it to the pot.
  2. Add the wide egg noodles to the broth and cook according to package directions until just tender.
  3. Stir in additional salt and pepper to taste as needed.

Notes

Great leftovers; noodles will absorb broth overnight. Adjust broth and noodle proportions when reheating if desired.
