Ingredients
  

For the crust
  • 1 pack Pie crust, store bought or homemade
For the filling
  • 1 cup Blackberries, fresh or frozen
  • 2-4 tablespoons Sugar Adjust based on berry sweetness
  • 1-2 teaspoons Cornstarch Use more if berries are very juicy
  • 1 tablespoon Lemon juice Enhances blackberry flavor
  • 1 pinch Salt Balances sweetness
  • 1 large Egg (for egg wash) or a little milk or cream Optional for washing
  • 1-2 teaspoons Cinnamon, vanilla, or orange zest Optional flavorings

Method
 

Preparation
  1. Unroll the pie crust and cut it into rectangles or circles.
  2. In a bowl, combine blackberries, sugar, cornstarch, lemon juice, and salt.
  3. Scoop a small spoonful of the filling onto one side of the crust piece, leaving a clean border all around.
  4. Fold the crust over, press the edges, and crimp with a fork to seal.
  5. Cut a couple of small slits on top to vent.
  6. Chill the assembled hand pies in the fridge for at least 10 minutes if the dough gets warm.
Cooking
  1. Preheat the air fryer to 350°F (175°C) for about 3 minutes.
  2. Place the hand pies in a single layer in the air fryer basket, ensuring space between them.
  3. Cook at 350°F for 7 to 10 minutes.
  4. Flip gently and cook for an additional 3 to 6 minutes until deep golden brown.
  5. Optional: Spray the hand pies with oil for extra color and crispness.
  6. Let the hand pies cool for at least 5 minutes before serving.

Notes

Store leftovers in an airtight container. Best enjoyed the same day but can last 2 days at room temperature or 4 days in the fridge. For reheating, use the air fryer at 320°F for 2 to 4 minutes.
