Ingredients
  

For the Taquitos
  • 8 pieces corn or flour tortillas Warm them before filling.
  • 2 cups shredded turkey (or rotisserie chicken) Use leftovers from Thanksgiving.
  • 1 cup mashed potatoes Leftover potatoes preferred.
  • 1 cup stuffing Use any leftover stuffing.
  • 1 cup shredded cheese Optional, but recommended.
  • 2 tablespoons hot sauce To taste if using stuffing.
For Serving
  • 1 cup sour cream For dipping.
  • 2 tablespoons chipotle sauce Mix with sour cream for extra flavor.

Method
 

Preparation
  1. Warm the tortillas slightly to make them pliable.
  2. In a bowl, mix together the shredded turkey, mashed potatoes, stuffing, and cheese.
  3. Spoon about 2 tablespoons of the filling into each tortilla.
  4. Roll the tortillas tightly and tuck in the ends.
  5. Secure with toothpicks if necessary and place seam-side down in the air fryer basket.
Cooking
  1. Spray the taquitos lightly with oil.
  2. Air fry at 350°F for about 15-20 minutes, or until golden brown and crispy.

Notes

These taquitos can be frozen for up to three months. Cool completely, wrap individually in foil, and store in a bag. Reheat from frozen in the air fryer for about 5-7 minutes.
