Ingredients

  • 1 cup dried hibiscus flowers (flor de jamaica)
  • 8 cups water, divided 4 cups for steeping, 4 cups to dilute
  • 1/3-1/2 cup sugar or sweetener of choice Adjust to taste
  • 1 small cinnamon stick Optional
  • to taste lime juice Optional

Method
 

Preparation
  1. Rinse the hibiscus flowers quickly in a strainer.
  2. In a pot, bring 4 cups of water to a boil. Remove from heat, add the hibiscus flowers and cinnamon stick if using, cover, and let steep for 15-20 minutes.
  3. Strain the steeped hibiscus into a pitcher, pressing the flowers gently to extract liquid without making it bitter.
  4. While the hibiscus concentrate is warm, stir in the sugar or your chosen sweetener until dissolved. It should taste stronger than the desired final drink.
  5. Add the remaining 4 cups of cold water to the concentrate. Chill in the fridge until cold, then serve over ice, adding lime juice if desired.

Notes

This drink can be made ahead and stored in the fridge for 4-5 days. Flavor improves after a few hours. Adjust sweetness and dilution based on your preference.
