Acai Bowl

Ingredients
  

Base Ingredients
  • 1 packet frozen acai packet (unsweetened or sweetened) Use unsweetened for better control over sweetness.
  • 1 medium frozen banana This is key for a creamy texture.
  • 2-4 tablespoons liquid (almond milk, oat milk, regular milk, coconut water or juice) Start with less to keep the texture thick.
  • 1 tablespoon Greek yogurt Optional, for added creaminess.
  • 1-2 tablespoons honey or maple syrup Optional sweetener if fruits aren’t very sweet.
Toppings
  • 1/4 cup granola Regular topping.
  • 1 medium sliced banana For a fresh taste.
  • 1/4 cup blueberries Optional for color and flavor.
  • 1/4 cup strawberries Optional for color and flavor.
  • 2 tablespoons shredded coconut Adds texture.
  • 1 tablespoon chia seeds Optional, adds nutrition.
  • 1 tablespoon peanut butter For richness.
  • 1-2 tablespoons cacao nibs or dark chocolate chips Optional for extra sweetness.

Method
 

Preparation
  1. Let your frozen acai packet sit on the counter for about 1 minute so it is easier to break up.
  2. Add to a blender: 1 acai packet, 1 frozen banana, and 2 to 4 tablespoons of liquid.
  3. Blend on low, then increase speed. Stop and scrape down if needed.
  4. If the blender is stuck, add 1 more tablespoon of liquid at a time. Try not to dump in a lot.
  5. Once it looks like thick soft serve, spoon it into a bowl.
  6. Add toppings right away so they stick into the cold base.

Notes

Keep toppings colorful and portion them in small containers for easy assembly. The blended base is best fresh; if you must prep, store it in the freezer.
