  • 30 ounces Frozen shredded hash browns (thawed if possible) Shred-style works best for a scoopable texture.
  • 1 cup Sour cream Provides a tangy creamy base.
  • 1 can Cream of chicken soup Can substitute with cream of mushroom soup.
  • 2 cups Shredded cheddar cheese Sharp cheddar is recommended for flavor.
  • 1/4 cup Melted butter Adds richness to the dish.

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. In a large bowl, stir together sour cream, cream of chicken soup, melted butter, and most of the shredded cheese. Save a small handful of cheese for topping.
  3. Gently fold in the thawed hash browns until coated.
  4. Spread the mixture into a greased 9x13 inch baking dish and sprinkle the remaining cheese on top.
Baking
  1. Bake for 45 to 55 minutes, until bubbling around the edges. For a deeper golden top, place under the broiler for 1 to 2 minutes, monitoring closely.
Serving
  1. Let the casserole rest for 5 to 10 minutes before serving to help it set.

Notes

Can be frozen before baking. Thaw overnight before baking. Leftovers reheat well in the oven or microwave.
