Ingredients
  

Basic Ingredients
  • 2 cups Self rising flour Or use all-purpose flour with baking powder and salt.
  • 1 cup Granulated sugar Reduce slightly for less sweetness.
  • 1/2 cup Lemon juice Fresh is best, bottled works in a pinch.
  • 1 cup Milk Any kind, dairy or non-dairy.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease an 8-inch cake pan or line it with parchment paper.
  2. In a bowl, add the dry ingredients and stir to break up any lumps.
  3. Pour in the wet ingredients and mix until smooth, taking care not to overmix.
  4. Pour the batter into the prepared pan and lightly tap it on the counter to remove air bubbles.
Baking
  1. Bake for 28 to 35 minutes, until a toothpick inserted comes out with a few moist crumbs.
  2. Allow to cool in the pan for 10 minutes before transferring to a rack to cool completely.

Notes

For additional flavors, consider adding lemon zest on top or a simple lemon glaze. The cake can be stored in an airtight container for up to 5 days.
