  • 2 cups Plain Greek yogurt Use 2 percent or full fat for the creamiest texture.
  • 1 cup Cookies (any crisp cookie) Graham crackers, digestive biscuits, vanilla cookies, or lightly sweet tea biscuits work well.

Preparation
  1. Preheat your oven to 350 F.
  2. Line a small springform pan or a loaf pan with parchment paper.
  3. Crush the cookies into fine crumbs using a zip bag and a rolling pin.
  4. In a bowl, mix the cookie crumbs into the yogurt until you have a thick batter.
  5. Pour the mixture into the prepared pan and smooth the top.
Baking
  1. Bake for 25 to 35 minutes, until the edges are set and the center jiggles slightly.
  2. Cool on the counter before chilling in the fridge for at least 2 hours.

Notes

Use thick Greek yogurt to avoid a gummy texture. Ensure cookies are crushed finely to maintain texture. Chill before slicing for clean cuts. The cheesecake can be topped with fresh fruit or served with nut butter for more satisfaction.
