Ingredients

For the Marinade
  • 4 pieces chicken thighs (bone-in or boneless) Thighs are preferred for juiciness.
  • 6 cloves garlic Mash with cilantro stems for maximum flavor.
  • 1/2 cup cilantro (stems and leaves) Do not waste the stems.
  • 1/4 cup fish sauce Provides a salty and funky flavor.
  • 1/4 cup soy sauce Adds depth and color.
  • 2 tablespoons brown sugar or palm sugar For gentle sweetness and browning.
  • 1 tablespoon lime juice Brightens up the flavors.
  • 1 teaspoon black pepper More than you think, it matters here.
  • 2 tablespoons neutral oil Helps the marinade coat the chicken.
  • 1 teaspoon grated ginger Optional for added flavor.
  • 1/4 teaspoon chili flakes Optional for heat.

Method

Preparation
  1. Mash the garlic with chopped cilantro stems, then stir in fish sauce, soy sauce, sugar, lime juice, pepper, and oil. Alternatively, blend all ingredients until combined.
  2. Marinate the chicken for at least 2 hours, preferably overnight.
Grilling
  1. Take the chicken out of the fridge about 20 minutes before cooking to bring it to room temperature.
  2. Preheat the grill to medium heat, taking care not to let it get too hot.
  3. Lightly oil the grates.
  4. Place the chicken on the grill and close the lid.
  5. Cook for 12 to 18 minutes, turning occasionally, until the outside is browned and the inside is cooked through.
  6. Let the chicken rest for 5 minutes before slicing.

Notes

Serve with sticky rice, cucumber salad, fresh herbs, grilled veggies, and lime wedges. If you're short on sides, simple fresh salads pair nicely.
