Ingredients

Main Ingredients
  • 1 to 1.25 pounds turkey breast cutlet, turkey tenderloin, or small boneless turkey breast
  • 2 cups stuffing cubes or dry bread cubes Baked in a small dish or foil tray
  • 1 to 2 tablespoons butter, plus a little more for serving
  • 1 cup broth, chicken or turkey
  • 10 to 12 pieces baby potatoes, halved or cubed Use 2 medium potatoes if desired
  • 2 large carrots, sliced on a diagonal
  • 8 ounces green beans, trimmed
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • Herbs like thyme, sage, rosemary, or poultry seasoning
  • optional a splash of cranberry sauce on the side

Method

Preparation
  1. Preheat and prep the pan by heating the oven to 400°F and lining a large sheet pan with foil or parchment.
  2. Start the potatoes and carrots first. Toss potatoes and carrots with olive oil, salt, pepper, and a pinch of herbs. Spread them out in the pan and roast for about 15 minutes.
  3. Add the turkey. Pat the turkey dry, rub it with a little oil or butter, and season well with salt, pepper, and poultry seasoning. Push the veggies aside and add the turkey to the pan.
  4. Prepare the stuffing by mixing stuffing cubes with melted butter and just enough broth to moisten. Put it in a small oven-safe dish and set it on the sheet pan.
  5. Add green beans later. Toss green beans with a little oil, salt, and pepper and add them during the last 12 to 15 minutes to keep them bright.
  6. Rest the turkey. When turkey reaches 165°F in the thickest part, pull it out and let it rest for 5 to 10 minutes before slicing.
Serving
  1. Serve the turkey and vegetables on a platter and enjoy your cozy Thanksgiving dinner for two!

Notes

Line the pan with foil or parchment for easy cleanup. Feel free to double the ingredients for four servings and adjust vegetable sizes for uniform roasting.
