Ingredients

For the Crostini
  • 1 loaf Baguette or ciabatta bread Sliced about half an inch thick
  • 2 tablespoons Olive oil For brushing on bread
  • 1 clove Garlic Cut in half for rubbing on toast
For the Topping
  • 2 cups Red or green grapes Roasted until wrinkly and glossy
  • 1 wheel Brie cheese Soft and creamy, rind optional
  • 1 pinch Salt For seasoning grapes
  • 1 pinch Black pepper Optional, for a sweet and savory vibe
  • 1 tablespoon Balsamic vinegar Optional drizzle before serving
Optional Toppings
  • 1 tablespoon Honey Drizzled over crostini before serving
  • 1/4 cup Walnuts Chopped and toasted for crunch
  • 1 tablespoon Fresh rosemary Finely chopped, for added flavor

Method

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette or ciabatta about half an inch thick and arrange on a baking sheet.
  3. Brush the bread slices lightly with olive oil and toast in the oven until crisp but not hard, about 5-7 minutes.
  4. Remove from oven and rub with the cut side of garlic for a subtle flavor.
  5. While the bread is toasting, wash and dry the grapes, then toss them with olive oil, salt, and black pepper if using.
  6. Spread the grapes on a baking sheet and roast in the oven for 12-18 minutes or until wrinkly and glossy.
  7. Slice the brie cheese.
Assembly
  1. Once the grapes are done, let them cool slightly.
  2. Top each piece of toasted bread with a slice of brie.
  3. Add a few roasted grapes on top of the brie, along with a spoonful of the pan juices.
  4. Optionally drizzle with honey, or sprinkle with walnuts or rosemary before serving.
  5. Serve warm and enjoy!

Notes

Best assembled close to serving time to prevent sogginess. Can roast grapes ahead of time and store in the fridge. Toast the bread earlier the same day to ensure crispness.
