Ingredients

Main Ingredients
  • 1/2 cup old fashioned oats Use old fashioned oats for the best texture.
  • 1/2 cup milk Dairy or non-dairy milk can be used.
  • 1/3 cup pumpkin puree Use plain canned pumpkin, not pumpkin pie filling.
  • 1/4 cup Greek yogurt Optional but recommended for extra creaminess.
  • 1 tablespoon chia seeds Helps thicken and adds fiber.
  • 1-2 teaspoons maple syrup or honey Adjust sweetness to taste.
  • 1/2-1 teaspoon pumpkin pie spice Or use a mix of cinnamon, nutmeg, and cloves.
  • 1/2 teaspoon vanilla extract Adds a dessert-like flavor.
  • 1 pinch salt A small amount makes a big difference.

Method

Preparation
  1. Grab a jar or container with a lid.
  2. Add oats, chia seeds, pumpkin puree, pumpkin pie spice, and a pinch of salt.
  3. Pour in milk, then add yogurt if using, plus maple syrup and vanilla.
  4. Stir really well, scraping the bottom to ensure no dry oats are hiding.
  5. Pop the lid on and refrigerate for at least 6 hours, or overnight.
  6. In the morning, stir again and add a splash of milk if it looks too thick.

Notes

These oats can last in the fridge for about 3 to 4 days. For extra flavor options, consider rotating between different flavors like berry or chocolate. Ideal for meal prep, avoid freezing as texture changes.
