Method
Prepare the Filling
- In a bowl, combine ground pork, chopped shrimp, minced garlic, grated ginger, soy sauce, sesame oil, green onion, sugar, and white pepper. Mix until sticky.
- To test seasoning, cook a small amount of the filling in a pan and taste.
Make the Broth
- In a pot, add chicken broth, sliced ginger, smacked garlic, green onion ends, and soy sauce.
- Simmer for 15-25 minutes. Strain for a clearer broth if desired.
- Taste and adjust seasoning with salt or more soy sauce if needed.
Cook the Wontons
- Bring the strained broth to a gentle boil.
- Place about a teaspoon of filling in the center of each wonton wrapper, wet edges with water, fold into a triangle, press out air, and seal.
- Drop wontons into the boiling broth and cook until they float and are slightly puffed, about 4-6 minutes.
- Add bok choy or spinach in the last minute of cooking.
Notes
For a vegan version, use mushrooms, tofu, and vegetable broth instead. Avoid wonton wrappers with egg or find vegan wrappers.
