  • 1 pkg Sugar cookie dough Store bought or homemade.
  • Optional toppings Sprinkles, white chocolate chips, or lemon zest.

Method

Preparation
  1. Preheat your oven to 325°F (163°C) and prepare a 9-inch springform pan by lining the bottom with parchment paper and greasing the sides.
  2. Press about two thirds of the sugar cookie dough into the bottom of the pan using slightly damp fingers.
Making the Filling
  1. In a mixing bowl, beat the softened cream cheese with sugar until smooth.
  2. Add eggs one at a time, mixing on low speed.
  3. Mix in vanilla, sour cream, and a pinch of salt until just combined.
Baking
  1. Pour the cheesecake filling over the cookie base.
  2. Drop pieces of the remaining cookie dough over the top for a rustic look.
  3. Bake for 45 to 60 minutes until edges are set but the center still jiggles slightly.
  4. Turn off the oven, crack the door, and let it cool for 20 to 30 minutes.
  5. Chill in the refrigerator for at least 4 hours, preferably overnight.

Notes

Chill time is crucial for flavor development; rushing it may result in a messy texture. To avoid cracks in your cheesecake, ensure you don’t overbake, cool slowly, and slice with a hot knife for clean cuts.
