Ingredients

Main Ingredients
  • 1 lb boneless skinless chicken breasts or thighs, cut into bite size pieces Thighs are usually cheaper and stay tender.
  • 12 oz fettuccine Regular fettuccine works best, but linguine is fine too.
  • 2 tbsp butter For flavor and richness.
  • 2 cloves garlic, minced Fresh is ideal, but jar garlic works in a pinch.
  • 4 cups chicken broth Use a broth you like.
  • 1 cup heavy cream For a classic creamy texture.
  • 1 cup freshly grated Parmesan cheese Melts smoother than pre-shredded.
  • to taste salt Adjust after adding cheese.
  • to taste black pepper Adjust after adding cheese.
Optional Ingredients
  • 1 tsp Italian seasoning For extra flavor.
  • 1 pinch nutmeg For warmth.
  • as needed parsley or baby spinach For garnish or mixing in.

Method

Preparation
  1. Heat a large pot or deep skillet over medium heat. Add butter, then add the chicken pieces. Season with salt and pepper. Cook until the chicken is lightly golden, about 4 to 6 minutes.
  2. Add garlic and stir for about 30 seconds until fragrant.
  3. Pour in the chicken broth and stir, scraping up anything stuck to the bottom.
  4. Add the fettuccine and break the noodles in half to fit. Press them down so they are mostly covered in liquid.
  5. Simmer and stir every so often for about 10 to 12 minutes until the pasta is tender. Add more broth or water if it looks dry.
  6. Lower the heat and stir in the heavy cream. Gradually add the Parmesan, stirring until melted into a smooth sauce.
  7. Taste and adjust seasoning with pepper and, if desired, a pinch of nutmeg.

Notes

Let the dish sit for 2 minutes off the heat to thicken further. For a lighter version, you can use half-and-half instead of heavy cream.
