Preparation
- Slice chicken breasts into thinner cutlets or pound them gently. Pat them dry with paper towels.
- Season both sides with salt and pepper, then lightly coat with flour and shake off the excess.
Cooking
- Heat olive oil and a little butter in a large pan. When hot and shimmery, add the chicken and cook until golden, about 2 to 4 minutes per side.
- Do not crowd the pan; work in batches if necessary.
- Once the chicken is cooked through, move it to a plate and tent it loosely with foil.
- In the same pan, add a little more butter if needed and garlic. Cook for 20 seconds.
- Pour in chicken broth and lemon juice, scraping up the browned bits. Let simmer to reduce slightly.
- Add capers, and lower the heat. Whisk in butter at the end for a smooth sauce.
Assembly
- Return the chicken to the pan and spoon the sauce over it. Let warm through for a minute or two.
- Sprinkle parsley on top, taste the sauce and adjust seasonings.
Notes
For best results, use fresh lemon juice and avoid over-flouring the chicken. This recipe pairs well with angel hair pasta, mashed potatoes, or roasted vegetables.
