Preparation
- Season the chicken thighs with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Let the chicken rest at room temperature for 10-15 minutes while preheating the Blackstone griddle.
- Preheat the Blackstone to medium-high heat, roughly 375-400°F.
Cooking
- Add a little olive oil to the griddle to prevent sticking.
- Place the chicken thighs on the griddle and cook for 5-7 minutes on the first side.
- Flip the chicken and cook for another 5-7 minutes.
- Brush the BBQ sauce on the chicken and cook for an additional 1-2 minutes per side to set the sauce.
Notes
For juicy chicken, avoid pressing down on thighs while cooking. If you like your chicken extra smoky or sweet, feel free to experiment with different BBQ sauces. Leftovers can be used in wraps, salads, or nachos.
